CRISPR Tech Could Bring Cheaper Beef to Your July 4 Cookout
As beef prices increase, biotech could provide a cheaper and tasty alternative.

Grilling on the Fourth of July is as American as apple pie, but as burgers and steaks get more pricey, fewer Americans can afford to pay up. Thankfully, biotech is working on a solution.
The California-based biotechnology startup SCiFi Foods is in the process of building its pilot plant to develop cultivated beef using CRISPR technology, with plans to release the product to a select group of a half dozen restaurant partners by the end of the year, SCiFi CEO and co-founder Joshua March tells Reason.
CRISPR targets and cuts genetic material to manipulate the code of organisms, enabling the suppression of some traits and the enhancement of others.
"CRISPR allows us to make tiny changes to [beef] cells to optimize their behavior," explains March. This allows SCiFi to target the high costs of cultivated beef by developing beef cells in single-cell suspension (a technique that has been used in the past for chicken and fish cells, but not beef), allowing the cells to grow in large-scale bioreactors without the need for microcarriers. This tech drastically reduced SCiFi's production costs and enabled the company to forgo expensive cell growth media components—gels or liquids used to support cellular growth in artificial environments.
"We've already dramatically decreased the cost of our ground beef through this process, and have a clear route to get to price parity with conventional beef (and to eventually be even cheaper)," says March.
The company says this tech makes its cell-based beef a thousand times cheaper to produce compared to other cell-based beef, and it aims to sell burgers for $1 each on a commercial scale.
It's safe to say that consumers would welcome cheaper beef. In 2016, Americans spent more than $800 million on beef during the two weeks leading up to the Fourth of July weekend, and "beef and veal prices rose 1.5 percent in May 2023, the largest monthly increase since October 2021," according to the U.S. Department of Agriculture.
March recognizes that some consumers may hesitate to switch to CRISPR beef but feels that the size of the industry and the production-associated benefits (CRISPR beef doesn't require deforestation or factory farming) will win over meat lovers.
"When studies explain cultivated meat to consumers, about 1/3 are really excited to try it 1/3 are neutral, and 1/3 say they would never touch it," says March. "Given that meat is a [trillion-dollar] market that's continuing to grow rapidly around the world, and that it will take some time to fully ramp up production, I really think that the challenge for us will be how quickly we can ramp up supply, not lack of demand."
March says taste won't be an issue because SCiFi mixes real beef cells with plant-based ingredients.
"While a portion of them are made of plant-based ingredients, we also add real beef cells which, even a small percentage, provide the same sizzle, smell, taste, and function of a conventional ground beef burger," notes March. "Plant-based products like Impossible and Beyond took us a long way, say from Boca Burgers, there is still something lacking—that genuine fat—and even a small amount makes a big difference in the overall experience of your burger."
SCiFi's next step is to get regulatory approval, a process that has become easier due to a USDA ruling that delineates CRISPR-made products from those with GMOs. Recent regulatory rulings signal a positive precedent for SCiFi; last week, the USDA approved the production and sale of lab-grown chicken for the first time.
"Thus far, out of about 150 companies in the entire space, only two have gained [Food and Drug Administration] approval. This is just a process that takes time," explains March. "It's great that the USDA [doesn't] consider CRISPR to be a GMO technology, and this certainly helps streamline our approach to regulatory approval (our use of CRISPR doesn't make it any longer to get approval than any other cultivated meat company)."
When regulators step out of the way and allow biotech companies to make tasty, cheap beef alternatives, consumers have a little extra cash to splurge on fireworks and mini American flags.

I am intrigued by cultivated meats, but I will say this : A couple of years ago, I moved from a major city (Memphis) to a rural community, which is economically driven by cattle farming.. I have found that the beef out here, which is pasture and hand raised, is significantly tastier (and juicier) than any you can purchase from any chain grocery store... The difference is hard to explain until one tries it..
With that said, I am generally skeptical when these companies say that their products will "taste" and cook just as good as normal beef. This is because I am certain they mean taste relative to store-bought beef as opposed to small-farmer-bought beef... Thus, I will be hesitant to buy cultivated beef in the same way I am hesitant to but Kroger beef, I'd rather just by my annual side of an entire cow.
With THAT said, though, I am cognizant of the ecological impact of farming domesticated cows (which is significant and objectively bad, even if you don't believe in "climate change") — and I am intrigued by the scientific curiosity of the entire enterprise) — so I am probably a more than a little more open to trying it than your average rural denizen.
Farming domesticated cows is not "objectively bad" unless you make it bad. Cows can make use of un-cultivatable fields that are too hilly for crops, but can support grass and flowers. The cows themselves can provide the grazing and fertilizer necessary to reduce fire danger while fertilizing and ensuring strong trees and habitat for other animals. Even on cultivatable land, the idea that ranching is "objectively bad" only holds if you believe that ANY non-natural process is objectively bad. In those cases, parking lots would be objectively bad as would corn or rye.
And while cows have a climate change impact, that impact is minuscule in comparison to the benefit. A cow raised for beef will make around 900 servings- with a lower carbon footprint than an airplane trip to India. The nexus of PETA activists, moral scolds and climate change often tries to obscure these numbers by playing time games with methane to make it look worse than it is to climate.

It is pretty funny. 25 years ago, I was talking with a group of people returned from Europe who couldn't understand why UK beef tasted like shit. It turns out that it was because europeans grass-fed their beef, while most american beef (at the time) was completely corn-fed.
Over the past few decades, American tastes have changed, but we still prefer our beef to have the relatively neutral corn foundation, but finished with sweet grasses. And with this change in tastes, we are seeing even newer styles of beef production, where farmers are experimenting with new methods of finishing their cattle that express the location and climate they are raised. I am a big fan of the various online ranch-direct meat providers (Porter Road, Cow Share, Snake River) because they allow you to access the incredible diversity that rising incomes in America can support.
Note that none of this experimentation and variety will be available if the government, green lobby, and moral scolds have their way- ultimately turning food production into an industrial affair that only large corporations have the economies of scale to perform.

American beef is easy to chew, but it does have a kind of gritty mealy texture I don't care for.
Fact is that most beef is not grass-fed or flower-fed. It's grain-fed. Roughly 90% in the US. Meaning the feed is grown on arable land not pasture land. Further, unlike bison/etc, cattle doesn't do as well on grasses that are native to western grasslands. Which means that water is also one of the unsustainable resource inputs. The combo eg is that Colorado River water is sent from near-desert to grow a water-intense crop (alfalfa) in a near-desert part of CA so that the alfalfa can be sent to Central Valley dairy. All massively subsidized and distorted so that CA can produce cheap milk advertised as if it's from Elsie the flower eating cow.
In theory, there's all sorts of animals which could be raised for food on marginal land. In the US, the only profitable non-niche foods are grain-fed beef, grain-fed pork, and grain-fed chicken. Even lamb is niche. Even dairy is mostly grain-fed. Forget about duck or venison or bison or grass-fed anything or game birds or prairie dog or squirrel or frogs (legged or legless) etc. Or any sort of meat which is common in most other countries.

Also, something North of 60% of the agricultural exports from the NL is ornamental and largely back to Germany (Find me a shrubbery!) and/or within Europe. NL produces relatively little food or timber. Rather literally (still) Dutch Tulips.
No it isn't. NL exports roughly 10 billion in flowers/horticulture. Meat is similar. As is dairy/eggs. As is veggies ($2 billion in tomatoes - only a little less than Mexico; largest exporter of onions, potatoes, etc). Fruits are only slightly smaller. They produce and export a ton of seeds. They employ a larger portion of their workforce in ag than the US. The only food they import in scale is grains.
Yeah, cultivated meat will find its niche (or maybe much more than a niche), but it won’t wipe out traditional meat.
Two things I would find interesting:
1. Nobody is making cultured chicken broth. It seems like it would be the easiest thing to make and could provide a lot of cheap nutrition as a base for soups and such.
2. Someday someone will get the idea of genetically engineering a new tastier meat that isn’t merely an imitation of an animal-grown meat.

The development of cultured meat can only be a good thing. I doubt that meat farming will completely disappear, but hopefully it will cause natural farmers to compete by increasing quality. I'm also hopeful that the industry as a whole will eliminate some of the ecologically damaging and moral questionable (due to their impact on animals) farming practices, and the development of cultured meat is one of the things that may cause that.
It still remains to be seen if the cost can be driven down and the quality increased to match even "store-bought" products.

The higher cost of lab meat represents the additional resource depletion they require. The specific argument in favor of lab meat and increasing “quality” of natural meat thus being, “We have to consume more resources to drive down resource consumption.”
The only place lab meat makes sense would be a colony on Mars (or the Moon or Venus or Near-Earth Orbit or whatever, assuming cows survive and (re)produce in such places) and, even then, once an autonomous, self-replicating, self-sustaining ecosystem that could produce meat, milk, and wheat as a byproduct could be set up, it would be preferable.

I think the real jump will come when the fast-food industry switches to these synthetic meats. That will come when the price point is down. My sense is that the fast burger industry is pretty competitive and when a new product allows one chain to drop prices, the others will follow. Again, my sense is that it is salt and sugar that most impact the flavor of a fast-food burger and not the quality of the beef.

Why? I don't eat many fast-food burgers, I just note that they sell a lot of burgers. When those chains pick up synthetic meat for the burgers they will move the industry in a big way. Some estimates put MacDonalds purchasing 1 billion pounds of beef a year. Just image what happen when some portion of that become synthetic meat.
Already, at McDonalds and other fast food burger places, they’ll have the basic #1 meal burger and then they’ll have the premium “Angus” burger. So, they’ll likely continue to have the cheap and the premium options.
This should bring the price of meat down. As virtue signaling idiots start dining on frankenchuck, the demand for actual New York strip should come down, bringing prices with it.
