All this even though there was another 'chain' coffee shop but a couple of blocks east. At the time level headed people were willing to let the market decide and it did. Starbucks is thriving there.

If you want real quality but still less expensive than buying out, find a roaster who will ship the same day they roast. You want to allow 48 hours for CO2 to finish emanating from the beans, so no need to rush the shipping.

The average coffee roast has well over 400 flavors in its prime. 2 weeks later, that number is cut in half and it becomes stale (everything you buy by the bag in a grocery store or Starbucks is.) Ideally, wean yourself off of dark roast-- French roast was developed following a crappy harvest year to obscure the shitty taste. Companies now over-roast to have uniformity of product since its difficult to consistently grind and brew fresh beans. Espresso is typically burnt to shit due to the popularity of lattes, since there is so much milk to cut.
