There's No Good Reason To Expand Government-Funded School Lunches
It's an expensive policy with little upside.

Earlier this week, Colorado voters opted to make the state's school-lunch program free for all public school students. Colorado's vote in support of universal school lunches comes as the USDA, which administers the National School Lunch Program, has been working overtime to paint the program as a great success that just keeps getting better.
During most of the Covid pandemic, the USDA made universal free lunches available to public school systems around the country. Even after that lapsed, many if not most kids in Colorado (and every other state) whose families can't afford to provide them with lunches or lunch money were already eligible to receive free- or reduced-price school lunches under the federal government's National School Lunch Program.
Supporters of the Colorado measure claimed around 70,000 students in the state who had received free lunches under the universal program were not eligible to receive free- or reduced-price school lunches. But instead of, say, providing cash to the families of those 70,000 students, the ballot measure made lunch (and breakfast) free for all students, regardless of need. It also ensured salary increases for cafeteria workers. Oh, and it'll cost $100 million per year.
Even some top-flight mental gymnastics doesn't make any of this sound like a good idea.
"The success of the measure means that all kids in public schools, no matter their family's income, will be able to eat free school breakfasts and lunches, reflecting the critical role schools play in helping students facing food insecurity," the Colorado Sun reported in the wake of the vote.
I have difficulty understanding how giving free food to kids whose parents are millionaires helps students facing real food insecurity. And I'm not alone. Earlier this year, a longtime school lunchroom worker in Michigan called universal school meals "a 'waste' because, too often, students whose parents could afford to pay for their meals would throw it in the trash."
But even hungry kids toss their government-funded school lunches in the rubbish bin. Why? It starts with the food itself.
In Pepperell, Massachusetts, for example, reports last week indicated more than a dozen students at Nissitissit Middle School had been sickened recently by school lunches—in two incidents a week apart. Both outbreaks of foodborne illness reportedly involved "undercooked chicken nuggets."
Also last week, in Sumter, South Carolina, controversy erupted over an undercooked burger served to a student at Bates Middle School. A school spokesperson defended the burger, claiming it was fully cooked (because the school system only buys precooked burgers for kitchen staff to reheat) and only looked disgusting because it was "prepared too closely together" with other burgers.
Ergo, not only are taxpayers paying for kids to eat precooked-yet-somehow-still-undercooked chicken nuggets and hamburgers for lunch—this is what Colorado voted for—but it appears school lunchroom staff don't even know how to reheat chicken nuggets or hamburger patties properly.
Such examples aren't outliers. Last year, similar issues popped up in public schools across the country, including in New York (gross, undercooked food), Alabama (raw chicken served to students), and Indiana ("Raw food, raw chicken, bloody chicken").
But it's not just undercooking food that's the problem. Last month, for example, food prepared and served in a middle school in Corpus Christi, Texas, caused a dangerous allergic reaction in a student.
Add to these examples others around the country I've reported on over the years, from "chunky milk" and moldy food served to school students in Maryland to maggot-filled granola served in Tennessee to similar examples in Michigan, North Carolina, Illinois, Missouri, and many other states.
Indeed, the National School Lunch Program is a disaster. It wastes untold quantities of money and food. As I detail in my book, Biting the Hands that Feed Us: How Fewer, Smarter Laws Would Make Our Food System More Sustainable, the program wastes most of its funds "not on food but, instead, on reimbursing schools for overhead costs. That means only about $1 of every $3 the USDA reimburses a school for serving a student a free lunch goes to buy food." The meals served in schools consist of billions of dollars of highly subsidized foods that might otherwise go to waste. But those foods still go to waste anyways because, according to a Los Angeles Times investigation I discuss in the book, more than $18 million in food is wasted in Los Angeles public schools alone each year.
Maybe, instead of deciding to spend $100 million each year to feed 70,000 potentially hungry students, Colorado could have bought up all that excess food from Los Angeles.

There shouldn’t be any free meals in schools.
BayLen’s articles are usually half self-promotion, half wrong. But there is some truth here:
There is no evidence that schools providing hot meals and milk leads to healthier choices, healthier kids, or better test scores. There is evidence that it’s all a big waste to subsidize agricultural interests and provide jobs to kitchen staff.
The solution is simple and existed long before the national school lunch program. Every kid brings lunch from home.
The poor kids and parents are already eligible for welfare specifically for that purpose: feeding children. Let them and their parents prepare their lunches.
Summer day camps have long had no lunchrooms, just picnic tables, water jugs, and shelves where kids could leave bagged lunches and lunchboxes to keep cool.
Kitchens at summer day camps often consist of a guy who made PB&J sandwiches for kids who forgot their lunch. No milk; everyone drank water. That’s it and no one starved.
Schools need to adopt the summer day camp model.

At the local schools, there is a food account for each student. The ones that cannot afford to pay, the government puts money in the account for them. Simple. You use your student Id to pay. And if memory serves, the food is so bland/awful there is little chance of people cheating the system.

Don’t provide handouts to cafeteria labor unions. Don’t subsidize agribusiness through bulk purchases of foods that kids don’t want.
It is the parents’ duty and right to provide food.
If they need help, give it. But don’t deny them the dignity of preparing a lunchbox for their kid.
A lot of people who have downloaded kids cannot be bothered to care for them properly, and packing Jr's lunch box is one of the areas they will fail in. Give them cash to pay for food for the kiddos and it will go into a drug dealers pocket or pay for ink at a tattoo place or pay the cell phone bill. So many things more important than taking care of their kids.
I have sympathy for those kids, and if feeding them breakfast and lunch in a way that keeps the cash out of their parent's pockets helps, then some overhead is tolerable.
Paying for every kid to get free meals is not tolerable overhead. Maybe schools could hand out the equivalent of MREs instead of having all that overhead of cooking (or undercooking) meals.
If that happens with their first kid, then mandatory sterilization. If the kids continue to cause trouble, I'm sure Nancy Pelosi can use their extra adrenochrome. Other organs can go to the deserving power elite. The remaining kids can staff the high-quality bug protein factories.
If the family is actually poor, it receives SNAP (the modern version of food stamps) so the taxpayers are _already_ paying for 3 meals a day. If the kids aren't getting fed even though their parents have grocery money, and the parents aren't in trouble for neglect, what in heck are we paying all those social workers for?

I appreciate the discussion of the problems with the meals themselves. I wish that was more of a focus than cost. When I went to school, yes dinosaurs ruled at that time, we had the lunch ladies who came in to cooked and serve the meals. I didn't like everything, but it wasn't just warmed over nuggets.
Most school food is like airline meals, heat and serve on site. My local school relies on a central kitchen. I like to see better meals, prepared on site. Millions are spent on school building, maybe that should include a kitchen.
I would also like to see more imagination in making meals for kids. We have very talented chef in this country, and I think they could make a better school menu than we have today. All this would cost more but would be getting value for our money. Making bad meals that kids toss is not helping. And maybe if meals were good middle class and wealthy parents would not mind paying.

You don't use the ones with gristle and fat for rare or medium rare because they won't cook evenly. If it's cooked perfect in the middle it'll be raw around the connective tissue, and might get sent back. Now you've wasted a steak and have to cook another one. When you're cooking a piece of meat to grey all the way through it will end up cooking evenly, and the heat will break down some of that connective tissue. It won't get sent back because the person ordering it has no taste.
You may think you've got some kind of "gotcha" on me, but that's what all good broiler cooks do.

Sad he had to throw those disclaimers in at the end despite showing how vulnerable mail in ballots are. There is a reason signature rejection rates are 15% for recall petitions and 1% for mail ballots. Depends on the need how much scrutiny there is.

Govt funded is not the same as local muni funded. And honestly yes there is a good educational reason for all kids to learn about nutrition.
France doesn't have a national school lunch program. It's all muni.
It costs an average of $3 per lunch. Parents who can afford it pay for that. Others get subsidized but not in a way that shows up kids at the meal.
The school sends the monthly lunch menu to the home. Along with, I believe, a recipe for the meal if the kid likes it. There is no lunch 'choice' (until high school) - but the meal has four courses (served as courses).
Here's a sample:
Green salad w red radishes in butter
Salmon fillet in lemon sauce w carrots and basmati rice
Small wedge of gouda or edam cheese
Vanilla or chocolate flan
Kids rotate setting up the table, serving the dishes/water, bussing the table, and cleaning the table up. Meals take up to an hour so that salad is gonna stay on the plate awhile when the kid is the hungriest.
Outcome: Nonexistent childhood obesity rate w kids who know how to eat different foods and converse at the table. So they grow up with the lowest adult obesity rate and a very long life expectancy.

Calling everything that isn't buying food "waste" is just silly. Food is not the number one cost in the restaurant business either. It is labor there too.
And calling out a handfull of bad kitchen examples as indicative of the entire systemm?? There are almost 100,000 public schools in America, each one locally run.
That said, I have seen the school lunch up close and personal. I regularly volunteer at my kids schools. Nobody eats the food. They take it, they eat the desert or maybe the raisins that come with the salad, and they toss the rest. They don't even drink the chocolate milk. Who skips the chocolate milk? Thats nuts!
But it is their only chance to talk, and ina. Lot of schools, particularly elementary, they eat too early. Third grade at my daughter's elementary eats at 10 am. They are not ready for lunch yet. So they just talk with their friends.
In the high school, they are too cool to stand in line for food the whole period. But those who do don't get enough food. They have this Michelle Obama "American kids are all obese" thing going where they don't get that most teenage boys need a lot of calories. A double quarter pounder with cheese and some fried zucchini would be a healthy choice for a lot of these guys, and they get a little 200 calorie entre with steamed vegetables (carrots and peas or maybe liima beans) that nobody is going to eat.
I think "waste" of food *is* the biggest problem, not paying staff a very low wage to prepare it. They often don't make stuff the kids want to eat, or they don't provide an environment conducive to eating it (like eating too early or too late, or the line being so long that they don't have time to eat).
My charter schools hot lunch program is also a donation program. They have parents select meals from local restaurants that their kids want and the school gets a cut. Prepaid before the month. No waste.
Sounds great. I've said that this is how things should be handled at every school: partner with a local restaurant and get parents to pay for it. If parents can't afford it, charity drives, or let the restaurants write it off.

Eat everything but save the cereal for last. Dump one into your bowl. If you didn't see the weevils, add milk and sugar, don't stir, and eat. Repeat. Usually half the boxes would show weevils, so you dumped that one out on your tray and went to the next box. That's why you picked so many cereal boxes and ate them last, one at a time. If you dared dump two in at once, adds were you'd see weevils in the second one and waste the good first one.

And yet, the parties — really just the Democrats — had the primaries forced on them, originally to stop them from being racially exclusive. Once the deal was done, the excuse changed to quid pro quo: They get their nominees printed on the ballot (at least for some offices in some jurisdictions) along with the party name, and in exchange for the free ballot access (along with advertisement of the endorsement) they have to open their nomination process to, potentially, the entire voting public. In some cases that means they have to get signatures to get into their primary (or an uncontested nomination) just as non-party candidates have to get signatures to get directly into a general election.
What the parties would really like would be a free hand in their own nominations while retaining a free ride to the printed general election ballot. Would they forego public primaries if the elections became effectively nonpartisan, by requiring the same preliminaries from all candidates and leaving the party names off the ballot? I think some parties in some states or local jurisdictions would accept that deal, but others not. Strong organizations with a lot of party discipline would have an advantage if the ballot access hurdle were fairly high for all, and they wouldn't need to have their party named on the ballot.
When I was a kid, I went to a private grade school (K-8) that provided school lunches. The 'lunch ladies' were moms of the students who were either volunteering or working for the school, but they all had kids in the school as students.
If you paid in to the program, you got a little green or yellow punch card for the month that had 20 punches available on it, I think it was about $40 each month (back in the '80's). Some kids brought their own lunches, and if you didn't have a punch card you could either pay cash or get one of your friends to cover you with their punch card by getting it punched twice.
That small fee was enough to cover the cost of the program to the point that the relatively few kids who needed assistance were able to get their cards subsidized by the rest of us - and they got the same cards, and no one knew who it was or not. We had pretty good food back then, too, looking back. Pizza day on Thursday, the lunch ladies thought that vegans were a myth. Good times.
My little town had an “honor farm” (prison for the county) that supplied the majority of food for the public schools (this is during the 70’s). Pretty healthy food, too, probably five older women cooked for a grade school of a couple hundred kids, all scratch. Although no news travelled quicker than boll weevil sightings amongst us brats.
We had a regular line for the kids, and the “free lunch” line for the kids that qualified, which included me and my buddies (some of us are still friends 50 years later!). I think lunch was 50 cents for the kids who paid.
Any honor farms are long gone, all kids get free meals now in CA, regardless of situation, and they even kept it going during the stupid Covid lockdowns. You went by school and got “grab and go” food for your kiddos during lockdown.
They (the state) wasn’t about to risk regime change by cutting off that free shit program.

I also have a Food Saver, but have used it more for sealing bandages and Survivalist/Prepper items. It seals super-airtight and cuts space considerably!

Old school - I still make jerky on the old offset smoker grill - you have to vent it to keep the heat down, but if you marinade it properly and add the right type of wood for smoke, it's awesome.
For spicy teriyaki jerky, I use a combination of apple and cherry. Thin sliced London Broil. Try to keep it at about 160 degrees or less. 6 hours or up to overnight.
I would love to do it old school style, but, alas, I'm an apartment dweller and neighbors might complain if the smoke wafts into their window or HVAC unit.
Perhaps during a camping trip some time or if I get a home with a yard and no HOAs within 100 miles.

The whole SPLC poll and summary seemed to be designed to foster the worst possible responses from Republicans and then spin them in the worst possible way. For example, "Nearly 7 in 10 Republicans surveyed agree to at least some extent that demographic changes in the United States are deliberately driven by liberal and progressive politicians attempting to gain political power by “replacing more conservative white voters.” Is then used to say We found that the ideas underpinning the white nationalist “great replacement” narrative recently cited by an alleged white supremacist terrorist in Buffalo, New York, have become thoroughly mainstream on the political right.
It seems more likely to me that the former statement is a statement of fact that ought to able to be made without being labeled as a white supremacist. Acknowledging changing demographics and political activism doesn't mean someone is in the KKK. I for one had never heard of the term "great replacement" until the shooting in Buffalo, and to date I still don't k now a single thing about the theory except the title.
