The problem with Sharia is that it is a government law. Kosher is not a law so no one freaks out about it. If Jews don't want to eat pork or shellfish or not work on Saturdays, that's fine. And Christian "laws" aren't even observed (women still get to wear pants, despite being forbidden, divorce is still allowed and even acceptable, etc).

The problem is not Sharia, the problem is government imposing a religion's tenets on a nation. Sharia does NOT mandate a $36 fine for rejecting a marriage proposal, it was the government of Chad that did that.

You have a fundamental misunderstanding about Islam.

Jesus, was not a government or military leader and in fact made that very clear. Thus, there is no basic conflict between a secular society (even one like ours with a Judeo-Christian cultural basis) and Church doctrine.

Mohammad, was leader of government (kind of a warlord) and leader of the military. Islam does not consider Theocracy an option, but proclaims that to suggest that government can be other than lead by clergy is Blasphamy.

Trying to draw a distinction between the government and Islamic law in a Islamic country is a distinction without a difference. Perhaps we should applaud Chad since previously there was no fine, but there was also no option but getting stoned.
