Rangers in the Great Smoky Mountain National Park admit they euthanized the wrong bear after a bear attacked a teen visiting the park. They say they are going to change procedures to make sure they only kill the bears they mean to in the future.

Some years ago a friend of mine's father gave me a bear roast for a couple ducks. I was telling a client about it and he offerd elk steaks in trade for the bear,25 pounds of elk. It was a very good trade. Some of the best meat I've eaten.

    1. Vapourwear   10 years ago

Good trade, bear is overly gamey (sp?) and parasite-y anyway. Elk is taaaaaasty.

Sad that - as far as I understand - wapiti (American elk) cannot be sold commercially in most states. Most restaurants that serve "elk" are actually serving red deer (a European variant) which are farmed in New Zealand. I've heard that wapiti is by far the superior of the two.

I had sausage for breakfast this morning that was elk meat mixed with some pork fat (elk can be very dry) and red chile powder. Yum, and I have the remaining 2/3 pound for tomorrow and Sunday.
