As someone who followed this closely, I await Dunphy's absolution of the officers.

Having several friends who work in the IA department two of the largest police forces in the US, I call BS. They've had guys on video selling drugs on the clock and had arbitrators give them their jobs back. It is practically impossible to get rid of a bad employee in the PD if the union stands behind them. Which means child molesters and maybe sexual deviants will lose their jobs. Otherwise, reinstated with back pay is the norm.
It is telling that they have an entire department of investigators that has to be called in to get someone fired. If you keep skipping out on your tour to bang your girlfriend for a couple of hours, your lieutenant can't just can your ass like any other low level supervisor would - he has to call in IA to do a bunch of surveilance for a few weeks at a cost of many thousands of dollars. And you still probably won't lose your job (unless you are a dick and none of the guys on the job like you, then the union might let you hang).

I've never had sahti, but Urban Chestnut in St. Louis brewed a Christmas beer (which I believe is still on tap because people in St. Louis suck at appreciating good beer) that was spiced with spruce tips that is AWESOME. Definitely has a gin-like vibe to it, though I don't believe they used any juniper berries.
Spruce, that does sound great. Doing a brew tomorrow with buckwheat honey and rosemary being the main flavoring ingredients. Going for the earth tones with this one.
I've had good results with honey (wildflower in my case) but never messed with rosemary. With the fall coming up, I'm going into German mode (Schwarzbier on Sunday, then Oktoberfest, then probably Pilsner) so won't need to worry about spices for a while.
I've been transitioning from mead making to beer making this year. There is so much more you can do with the ale/beer concepts than mead and make it work that the change was inevitable. I don't have the dream set up just yet, but it is getting there.
If you would like an example, look for Anchor Our Special Ale, which is released in the winter each year. The recipe changes every year, but all of them have spruce. And they age quite well.
