Earlier this week the news broke in food circles that Il Mondo Vecchio, an acclaimed Denver, Colorado-area salumeria that since 2009 has been producing a wide variety of artisanal cured meats—including Italian-style dry sausages like culatello, pancetta, and guanciale—will be closing its doors for good. Why?
